Welcome to the Cooking and Recipes section of our website. A little background on our diet and cooking is in order. I stopped eating meat when I was in my mid-twenties and was a real vegetarian for several years. Somewhere along the way I put seafood and then poultry back into my diet. But, I have not eaten red meat or pork in over forty years. Kristine will occasionally have meat at a restaurant but nothing at home. What we do eat is a plant based Mediterranean style diet. We typically eat seafood or chicken about once a week. Kristine cooks in the oven or uses a crockpot and I cook on the stovetop or grill. We both enjoy flavorful and spicy dishes but also a simple meal like grilled chicken, rice and vegetable. We are pretty comfortable with what and how we eat (but do not judge others) and have been encouraged to share our recipes here. I’m less likely to follow a recipe than Kristine and I don’t measure much of anything, I realize it makes my recipes a little harder to follow but it’s where I live.
